Convert color dependant drawing to named plot style problems

I'm trying to convert a color dependant plot to named plot style. I have done this a bunch of times but am haing problems right now.

After I run CONVERTCTB AND CONVERTPSTYLES I go into my layer manager and try and select the different named plot styles for the layers. It appears to kinda be working because it switched the layers from colors to Style 1, etc.. I'm seeing the entier plot style column is greyed out. If I select an individual layer to change the plot style it doesn't allow it to change, if I select all layers and choose a new plot style it will change all of them. What's confusing me is that I can't change them individually and the plot style column is greyed out.

Any help is appreciated.
